Tomato Paneer pulao

I just made this accidentally as I was lazy to cook a full meal and to my surprise this has bagged a place on my husbands favorite dishes list :)
Ingredients
- 1 cup rice
- 1 cup water
- 2 medium tomatoes finely chopped
- 1/2 large onion finely chopped
- 3 green chillies
- 2 red chillies (optional)
- 1 tbsp ghee/butter/oil
- 1/2 tsp cumin seeds
- 1 bay leaf
- 1/2 tsp coriander powder
- 8-10 paneer cubes (upto you as to how much u wanna add)
- 1 tsp kasturi methi
- salt per taste
Recipe
- Heat the ghee/oil/butter in a pressure cooker
- once the ghee is hot add cumin seeds and wait till they splutter.Now add green chillies, red chillies and fry for another minute.Add onion, bay leaf, coriander powder and fry for two minutes
- Once the onions are well cooked, add paneer cubes and fry for 3 mins.Now add tomatoes and cook for 4-5 minutes untill the tomatoes are completely cooked and form a thick gravy
- Add kasturi methi powder and cook for a minute
- Add rice and fry for another 3 minutes.add salt and water.
- Cover the pressure cooker with a lid and cook up to 3 whistles.
- Open the lid once the pressure has escaped and serve

Low fat Eggless Mango Cake

I happened to eat mango cake at one of my friends place during a summer barbecue party.I was hesitating to eat it but to my surprise it tasted very good.Ever since I wanted to give it a try and found this recipe

Ingredients
1 cup fresh mango puree(I used store bought mango puree)
1 cup all purpose flour
1/2 cup semolina/sooji/rava (fine)
1 cup sugar
1/4 cup yogurt
2 tbsp vegetable oil
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cardamom powder
Pinch of salt
Raisins/nuts(optional)
Method
Preheat oven to 350F and grease a baking tray.
Sift all purpose flour , baking soda,baking powder, salt and keep aside.
Blend together yogurt, mango puree, sugar, oil, cardamom powder.
Combine all dry and wet ingredients together.
Fold in raisins/nuts of your choice
Pour the batter in the greased baking tray
Bake the cake for 35-40 mins or until golden brown
Cool the cake and slice it

Avocado mozzarella sandwich

Ingredients

- 3 slices of white/wheat sandwich bread
- fresh mozzarella cheese as required
- avocado slices

Recipe

- Toast the bread slices on a pan until golden brown
- Stuff mozzarella slices between two slices of bread
- Top it with avocado slices and cover it with another slice of bread
- Cut the sandwich into two halves diagonally
- Serve it as it is or with some ketchup
